I have create a new project with "new" and I wish to save it with save as, it is the role of this menu, otherwise has what serve these options ?

That bar is just a standard part of the Mac OS. Many software programs that don't use it, still have it up there. The functions don't work, so they aren't connected to anything.
It sounds like you may be trying to take a screenshot, or save a Theme. If you go to https://www.soundspectrum.com/support/contact.html, I will be more than happy to walk you through any G-Force process.
