On the Scene menu there is a choice for a custom scene, but I cannot figure out how to do it and can't find any documentation. Please help.

That button isn't for creating a Custom Scene (although you absolutely can do that), but rather for creating a Custom Scene Category.

Categories make up Themes, which allow you to customize your Aeon experience quickly and easily.
