I want to run soundspectrum to my home theater projector from a Mac while playing music from my stereo system, but my stereo will not be connected to the computer.
Has anybody used the microphone method? How well does it work?

so you want to run a mic to pic up the sound coming from your stereo?
if so I believe it would work in atleast a limited way, but i dont know how well it would actually sync wih the music. does your mac have a line in for audio? if so that would be the way to go.
connect the output from say your cd player to the line in on your mac then connect the line out from your mac to the jacks where your cd player would normally be connecte to the stereo and you're in.
I had to buy a lot of extra long cables so I could have my stereo connected to my computer.

I do that all the time from my home theatre into the mic in on an XP laptop (with large external monitor). It works great.
As suggested, unless your gear is all close together you may need a long stereo audio cable or a cable extension.
P.S. Some people may not like watching soundspectrum on one screen and video on another screen at the same time, and complain at you if you do that.
